Squash Chips

Serves 2.


  • cooking spray
  • 1 medium yellow squash, thinly sliced
  • salt to taste
  • oregano to taste


  1. Preheat oven to 200°F.
  2. Coat 2 baking sheets with cooking spray.
  3. Place squash in a single layer on baking sheets.
  4. Coat squash with cooking spray.
  5. Sprinkle seasonings over the vegetables.
  6. Roast 2 hours or until vegetables are crisp and dry.

Cook’s Tips
Use a mandolin to evenly slice the squash.

To recrisp, cook on a baking sheet for 10 minutes at 250°F.

Variation suggestion
Use Zucchini instead of the yellow squash.
